  1. turn broiler on
  2. combine bread crumbs, Parmesan, garlic and parsley in small bowl
  3. Heat heavy bottomed skillet to med high
  4. add oil, let oil heat up for 2 minutes
  5. add butter.
  6. Once butter starts to brown, add steak. Leave the steak alone for 3 minutes, flip, and for the love of god don't flip it again for 3 more minutes.
  7. remove steak and cover one side with mustard.
  8. smother that beautiful steak (mustard side) with the breadcrumb/Parmesan mixture. pat it down nice and firm
  9. slide it into the broiler for a couple minutes. or until nice and brown
  10. take it out and LET IT REST!! Give it 3 minutes. Now you can eat.

Season the steaks with salt and pepper on both sides. Divide panko mixture evenly between filets, patting down slightly to adhere to steaks. Remove from oven and serve garnished with fresh parsley, if desired. Or should we say, darn crustin'… in that this crust of pungent garlic and nutty Parmesan will have you saying this steak is darn delicious and I wish I had tasted that crust sooner. But speaking of the earth, root vegetables such as potatoes and parsnips match perfectly with the steak and crust.
