Reduce the heat to a simmer and add the tofu and baby spinach, stirring every so often to coat them in the sauce.   6. Stir for about 2 minutes. Halfway through, add 1 Tbsp. of white sesame seeds.

Reduce the heat to a simmer and add the tofu and baby spinach, stirring every so often to coat them in the sauce. Whisk together the tamari, rice vinegar, maple syrup, sesame oil, and ginger. Place the cubed tofu into a sealable plastic bag or container.
