The ingredients needed to make Vegan Green Gram Idlis/Dosas:
  1. Take 250 gm green gram
  2. Prepare 100 gm split black gram
  3. Prepare to taste Salt
  4. Prepare 1 pinch soda bicarb
  5. Get Water for soaking and for grinding, if needed
  6. Get 1 tablespoon Oil for greasing
  7. Make ready 3-4 garlic pearls chopped
  8. Make ready 1 large dry red chilli/2 paddi chillies

I have asked you to soak the dals separately because they require more water than the rice. Idlis served with sambarand chutneyis one of the most favourite snacks in South India. The basic idli is made with rice and udad dal. But, idlis can be made more interesting and healthy by replacing rice and udad dal with different ingredients like semolina, finger millets, green gram etc.

Instructions to make Vegan Green Gram Idlis/Dosas:
  1. Wash and soak both the grams for 6-8 hours in adequate water
  2. Drain the water after the soaking period
  3. Grind the grams with garlic and chilli using very little or no water
  4. Transfer the batter to a large bowl and keep covered for 3-4 hours for fermentation
  5. Before cooking, add soda bicarb and salt to the batter. Mix well
  6. Grease idli trays and add 1-2 tablespoons of the batter in each and steam for 8-10 minutes
  7. Let cool and demould the idlis
  8. Serve warm with your choice of chutnies/sambhar/veg stew
  9. Alternatively, you can make dosas of the batter too. The entire process remains the same, just skip adding the soda bicarb to the batter
